Banana & Coconut Chia Pudding (serves 4)
1 cup chia seeds
1 x 400ml tin coconut milk
2 drops vanilla extract
1/2 cup water
- Place the banana into the Thermomix bowl and mix for 4 seconds on speed 4.
- Then add the chia seeds, coconut milk, vanilla extract and water to the TM bowl. Mix together for 5 seconds on speed 5.
- Let it set for 15 minutes, it will become quite firm. You can let it set in the fridge if you prefer it cooler. It also can be prepared the night before, but cover each bowl to prevent the top from drying out.
- When ready to eat, top with extra chopped banana, walnuts, and a drizzle of honey. Enjoy!
*You can swap the toppings around, I personally love berries.
