Basil & Spinach Pesto
1 handful of baby spinach leaves
1 handful of basil leaves
1/4 cup pine nuts
2 cloves of garlic
Salt & pepper to taste
5 Tbsp olive oil
- Put the pine nuts in a pan and toast (just start to brown).
- In your Thermomix place the toasted pine nuts, garlic, spinach, basil and salt and pepper to taste. Process it all on speed 6 for 4 seconds, scrape down the bowl and repeat.
- Turn the Thermomix to speed 2 and drizzle the olive oil in.
- Store in an air-tight jar.
