This recipe takes no time to put together, so great for a mid week option. Its also perfect to use up leftovers. I make this for the family on a regular basis, and its a hit with everyone.
Fried Cauliflower Rice
1 head of cauliflower
3- 4 rashes of bacon
200g raw peeled prawns
1 zucchini diced
1 carrot diced
2 tbsp Sambal Oelek
3 tbsp Tamari
1 tsp fish sauce
1/2 tbsp honey
Optional: Frozen peas
Handful of spring onions
1 Egg (whisk up with fork)
Cut your cauliflower into florets and place into Thermomix or food processor. Cut down to rice size and put in a microwave safe bowl, cover with cling wrap and steam for 1-2mins in the microwave.
Meanwhile, melt coconut oil in a large frypan and pre-cook the prawns. Make sure not to cook them too much. Remove and set aside.
Now to the oiled empty pan add the bacon and carrot and cook until almost browned and carrot softened. Add the Zucchini and cook for a further minute.
Add the sambal oelek, tamari, fish sauce, and honey and mix together and coat everything evenly.
Then put in the cauliflower rice, peas and spring onions and stir until paste is coating everything.
Return the prawns and stir through.
Add egg and mix through as cooks.
Serve and enjoy. Add a dash of Tamari if desired.
* The great thing about this recipe is that you can include any vegetables that you have available or you like. This served my family of four with leftovers for lunches.
**Tamari is an alternate to Soy Sauce.
